I love how beautiful your crimping is on the pastry. I had problems with my ricotta leaking out before it was baked too. I could taste the caramel in the apples before they were baked but not afterwards. I think that the flavor was too subtle to compete with the cheese and puff pastry. The first recipe I made with TWD was the Brown Sugar-Apple Cheesecake. We didn't make caramel though. The recipe calls for sauteing the apples in some butter and then adding brown sugar and cooking until it gets syrupy and coats the apples.
