A farm girl would know. Great job on the chicken. I have been seasoning my meat when I bring it home, too...it does add an extra something. I think this fear stems from the fact that the one time I told my dad I was going to buy one, he told me there probably wouldn't be that much of the entrails left inside it, but I should make sure to stick my hand in and clean it nonetheless. I bought leg quarters instead.

However, since I'll be living with them for a month after graduation, I can just have him do the cleaning. That really sounds like the best solution.

Glad to hear you found a stellar recipe though! Between you, Pam, and Jenny at least I'll know which roast chicken recipe I should use.Joannehttps://www.blogger.com/profile/17133232352924060797noreply@blogger.comtag:blogger.com,1999:blog-3034743878261895543.post-42213800127011166072009-05-16T11:53:00.000-04:002009-05-16T11:53:00.000-04:00I love a roast chicken! I do keep reading that being able to roast chicken well is one of the tests of a great chef, so that fits! :) This looks SO good, and if you have any leftover, and some good bread (maybe something with cornmeal? !!!), you can of course make an incredible sandwich!Audreyhttps://www.blogger.com/profile/14912114716426828436noreply@blogger.comtag:blogger.com,1999:blog-3034743878261895543.post-62346839656577220772009-05-15T22:03:00.000-04:002009-05-15T22:03:00.000-04:00One more thing....a really quick and simple RC is ...One more thing....a really quick and simple RC is in Barefoot Contessa's collection with lemon and onion and croutons. I tend to agree that largely the resulting "wonderfulness" was in part due to your chicken product. Once I bought a particular chicken here in Columbia, MO and I learned there really is a difference. However, you and your recipe had bit to do with the end result. clap clap Did your husband love it? I love chicken but always just buy a rotissiere chicken so that I don't have to touch a raw, whole one!
